Almond Flour Banana Muffins
Adapted From: Primal Paleo

These muffins are fabulous by themselves or drizzled with honey! Only a few ingredients needed, and they are so so simple to make.


1 1/4 cup almond flour
2 eggs
1 banana
1/8 cup coconut oil
handful of berries or fruit


Place the almond flour, eggs, banana, and coconut oil in a food processor; blend well. Stir in the handful of fruit (blueberries, grated apple, diced peaches, etc.) before pouring into greased muffin tins. I chopped another half banana and added it for extra banana flavor this time. The muffins will not rise, so fill tins to the top. Bake at 350° for 12-15 minutes.
