Chocolate Chip Cookies made with Coconut Flour

WOW... these are good. Using coconut flour makes them fluffy and adds a unique texture. I double this recipe... it's my favorite Paleo treat!!! 


1/3 cup coconut flour
1/4 cup coconut oil, melted
2 tblsp raw honey
1 tsp vanilla extract
1/4 tsp sea salt
2 eggs


Using an electric mixer, mix together the coconut flour, coconut oil, honey, vanilla, sea salt, and eggs until well blended. The batter will thicken as it sits. Stir in the chocolate chips. Drop cookie dough by tablespoonfuls onto a baking sheet lined with wax paper. Flatten and shape cookies - they will not spread on their own. Bake at 350° for 12-14 minutes, or until the edges are golden brown. Let the cookies cool for 10 minutes before transferring to a wire rack. Store in an airtight container at room temperature, or in the refrigerator.

Makes 12 cookies
