Raw Apple Cake with Warm Butter Sauce

Prepare to die and go to heaven! This raw apple cake recipe is different than any other. It's simple, packed with amazing flavors, and topped with a warm butter sauce - oh my!!!

Ingredients:

2/3 cup butter, softened
2 cups sugar
2 eggs
2 tsp vanilla extract
2 cups flour
1/2 tsp salt
2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup pecans, chopped
4 cups red or green apples, grated

Butter Sauce:

1 cup butter
1 cup evaporated milk
2 cups sugar
1 1/2 tsp vanilla extract

Preparation:

In a large bowl, mix butter and sugar together with an electric mixer. Add eggs and vanilla; beat together. In a medium bowl, hand stir the flour, salt, baking soda, cinnamon, and nutmeg together. Add the flour mixture to the butter mixture in thirds, beating after each addition. Cake batter will be a dry crumbly consistency. Add pecans and apples; beat well. Batter will be a very moist cookie dough-like consistency, not runny. Spread cake batter into an ungreased 9x13 pan. Bake at 350° for 35-40 minutes. Let cool.

To make the butter sauce, melt the butter in a medium saucepan. Add the evaporated milk, sugar, and vanilla; cook over low heat for 10-12 minutes, stirring occasionally - DO NOT BOIL. Serve the butter sauce warm over individual cake slices. Also goes well with a scoop of vanilla ice cream. :)
