One-Pan Italian Chicken Bake

Make that TWO-Pans! We have to double this recipe, since all of the kids go back for seconds. I make two pans the exact same way. Bake both pans at the same time in the oven, side by side, for the same amount of time. 


Ingredients:

3 generous cups red or yellow potatoes, quartered
2 14.5 oz cans cut green beans, drained
1-1 1/2 lb boneless chicken thighs (about 4 or 5 thighs)
3/4 stick butter, cut into pieces 
2 Italian dressing dry seasoning packets


Instructions:

Pre-heat oven to 350 degrees. 

Grease a 13x9 pan with cooking spray. Line one side of the pan with green beans. Cut potatoes up. Line opposite side of pan with the potatoes. Line the chicken thighs down the middle of the baking dish. Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing packets over the entire pan. Cover with foil. Bake for 1 hour 15 minutes, or until chicken is fully cooked. 

 


Recipe note: Chicken breast can be used instead of thighs.
