Dill Chicken Patties

This is my easy go-to recipe when I don't have lots of time to prepare a meal. It's quick, cheap, healthy, and pretty darn delicious. Substitute the canned chicken for canned salmon or tuna if you prefer.

Ingredients:

1 (12.5-ounce) can chunk chicken breast {packed in water}, drained
2 eggs
1 tsp dill weed
1/2 tsp sea salt
1/4 tsp black pepper
2 tblsp coconut oil

Preparation:

In a large bowl, stir the chicken, eggs, dill, salt, and pepper together. Heat the coconut oil in a large skillet over medium heat. Shape the chicken mixture into 9 patties. When the oil is hot, fry three patties at a time for 2 to 3 minutes on each side. Don't flip them before they are brown, or they will fall apart!
