Lemon Shrimp Scampi

This is a very simple shrimp recipe that I tweaked to make it paleo-friendly. Each bite bursts with flavor in your mouth! My husband's favorite is when I serve it with a steak {cowboy-style}. Or to make it a true Italian dish, serve the scampi over pasta or rice.

Ingredients:

1 (24-ounce) bag large shrimp {easy peel}
3 tblsp coconut oil
3 garlic cloves
1/2 tsp fine sea salt
1/4 tsp black pepper
1/2 cup lemon juice {about 2 large lemons}
zest of 2 lemons
1/2 cup white cooking wine
1/2 cup chicken stock
1/8 cup fresh or dried parsley

Preparation:

Peel the shrimp. Heat coconut oil in a large skillet over medium heat; sauté the shrimp for 5 minutes. After 4 minutes, add the garlic and continue to sauté for the remaining minute. Add sea salt and pepper; stir. Then add the lemon juice, zest, cooking wine, and chicken stock; simmer uncovered for 10 minutes. Sprinkle with parsley and serve.
