Salmon with Mango Salsa

There is so many dynamics to this savory dish that will rock your taste buds! In every bite you experience   the warm salmon and cool salsa... the sweet mango mixed with a cilantro kick... its an amazing combination.

Ingredients:

4 (6 to 8-ounces each) skin-on salmon fillets
2 tblsp coconut oil
sea salt
black pepper


Mango Salsa

2 ripe mangos, peeled and diced
1 cup cherry tomatoes, halved
1/2 cup red onion, minced
1 cup fresh cilantro leaves, stems removed and chopped
1 jalapeño, seeds removed and minced
2 garlic cloves, minced
1 tsp ground cumin
pinch cayenne pepper
juice from 1 lime
1 tblsp olive oil
sea salt
black pepper

Preparation:

In a large bowl, stir all the mango salsa ingredients together. Refrigerate to keep cool. In a large skillet, melt coconut oil over medium-high heat. Season salmon fillets with sea salt and pepper. When the oil is hot, fry the fillets flesh side down and cook for 2 minutes. Flip over and cook on the skin side for 2 more minutes, or until the fish has a golden sear on both sides. Place salmon fillets on individual plates and top with lots of mango salsa.
