Delicious Caramel Popcorn

Homemade caramel popcorn has always been a favorite of mine. I can't stop eating it.
Brandon is a sugar lover - he likes this recipe made with 2 cups of brown sugar. It makes the caramel more dense. I prefer mine to be more light by using only 1 cup of brown sugar.


1/2 cup butter
1 cup brown sugar
1 cup light corn syrup
1 tsp vanilla extract
1 (14-ounce) can sweetened condensed milk
3 bags of microwave popcorn


Melt butter, sugar, and syrup together over medium-low heat, stirring constantly. Boil for 2 minutes while stirring. {I use a candy thermometer to make sure the temperature doesn't go higher than 215°F} Remove from heat; stir in vanilla and condensed milk. Pour over large bowl of popped popcorn. Stir until well coated.
