Skinnies

I don't know how crepes became "skinnies", but that's what my kids call them. They got the name from their sweet Grandma Sharon, and I'm sure this recipe has been in her family for a long time. :) They are delicious! My kids would eat them everyday if they could. I eat mine with my favorite buttermilk syrup!
Ingredients:
6 eggs
1 cup sugar
2 cups flour
2 cups milk or water
Preparation:
Combine all ingredients in a blender; mix well. Pour a thin layer of mixture onto a greased pan or griddle. Brown each side for 1 1/2-2 minutes.
6 Servings {12 crepes}
