Flavorful Banana Bread

For the best flavor and a tender texture, use ripe bananas that have an even yellow-colored peel with tiny brown spots. 

Ingredients:

1 1/2 cups sugar
1/2 cup butter, softened
3 eggs
3 medium bananas, mashed
1/2 cup buttermilk {tip}
3 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 (12-ounce) package semisweet chocolate chips, optional
1/2 cup chopped walnuts or pecans, optional

Preparation:

Mix sugar and butter with a Kitchen Aid or an electric mixer on medium speed for 2 minutes. Add eggs, one at a time, mixing well after each addition. Add bananas and buttermilk; mix on low speed for 1 minute. In a separate bowl, combine flour, baking soda, and salt; stir together. Add dry ingredients to banana mixture; blend on low speed until just blended. {Stir in chocolate chips or chopped nuts to the batter, if desired.} Grease two 9x5 loaf pans with cooking spray, then sprinkle with flour. Pour batter evenly into both pans. Bake at 350° for 50-60 minutes, or until toothpick inserted in centers comes out clean. Remove from pans; let cool completely on wire racks.
