Muddy Buddy Truffles 


Ingredients:


Chex mixture 

4 cups Rice Chex 

1 cup creamy peanut butter

1/3 cup powdered sugar


Coating

2 cups semi sweet chocolate chips

1/2 cup powdered sugar


Instructions:

Place cereal in a large bowl. Crush into small pieces with a potato masher, leaving some bigger pieces as well. 

Add the peanut butter and powdered sugar to another bowl. Heat in the microwave in 15 second intervals, stirring in between each one, until melted smooth. 

Pour the peanut butter mixture into the cereal, stir until well combined. Place the mixture into the freezer to chill for about 30 minutes. 

Next, melt the chocolate chips. Remove the cereal mixture from the freezer and roll into about 1 tblsp sized balls. About 18 truffles. 

Coat the balls in the melted chocolate and place each one onto a cookie sheet lined with parchment paper in the refrigerator for the chocolate coating to harden. 

Next, add the powdered sugar (1/2 cup) to a bowl. Once the chocolate has hardened, roll the truffles in the powdered sugar.
