Cherry Chocolate Chip Cookies

Cherry Chocolate Chip Cookies

Soft and chewy chocolate chip cookie recipe with the delicious addition of cherries. The perfect cookie for Christmas or Valentine's Day.

Ingredients:
  • 1 Cup (2 Sticks) of Softened Butter

  • 1 Cup of Granualted Sugar

  • 1 Cup of Light Brown Sugar

  • 2 Teaspoons of Vanilla Extract

  • 2 Eggs

  • 3 Cups of All Purpose Flour

    1 1/2 tsp cornstarch

  • 1 Teaspoon Baking Soda

  • 1/2 Teaspoon Baking Powder

  • 1 Teaspoon of Salt

  • 8 oz of Candied Cherries, Chopped

  • 12 oz of Semi Sweet or Milk Chocolate Chips

    Instructions:

  1. In a medium size bowl sift of whisk together flour, baking soda, baking powder and salt. Set aside.

  2. Using a stand or hand mixer cream together butter, sugar, brown sugar and vanilla.

  3. Mix in one egg at a time. Once combined add second egg mix an additional minute.

  4. Gradually add flour mixture until combined. I like to add a 1/2 cup of flour at a time.

  5. Add in chopped cherries and chocolate chips until mixed well.

  6. I like to use a cookie scoop or roll dough into 1 1/2 inch balls on a parchment paper lined cookie sheet.

  7. Bake at 375° for 8-10 minutes. You just want them ever so golden. The edges will be slightly brown.

  8. Cool on a baking rack and enjoy!

    Yield: About 5 dozen cookies

Where to find Candied Cherries?

The first time I used a recipe with candied cherries I had no idea where to find them. What no one tells you is that these are sold in 8oz tubs in the produce section. Often they can be found next to the candied fruit for fruit cake at the holidays. Or they can be found on Amazon, of coarse ;)

Chopping candied cherries can be a bit sticky. Try chopping them into quarters with a sharp knife.
