Street Tacos

Ingredients:

2 pounds marinated Carne Asada beef

10oz pkg Ranchero Queso Fresco cheese (or Mozzarella)

14 tomatillos, all size varieties

7 green arbol chile peppers, fresh

15 red arbol chili pepper pods, dried 

1 white onion, chopped

Fresh cilantro, chopped

4 or 5 fresh limes

30 pk Guerrero white corn tortillas 



Prepare the Green and Red Salsa the day before!!!











Green Salsa Prep:

Husk and rinse 7 tomatillos. Break stems off tomatillos and 7 green chilies. Place both in a large pot, add enough water to cover; boil on high until tomatillos are light green and brownish in color. {If you're making green AND red salsa, boil all 14 tomatillos for both recipes.} 
In a blender or food processor, add 7 cooked tomatillos (save the other 7 for the red salsa), and 7 cooked green chilies; purée to thin consistency. Salt and pepper to taste; pour into tupperware and refrigerate.

Red Salsa Prep:

Break the stems off 15 red chili pods. Place pods in tin foil; fold all 4 sides on top to close. Heat packet on skillet over medium-low heat for about 5 minutes, turning once. Be careful not to turn them brown!
In a blender or food processor, add the other 7 cooked tomatillos and 15 toasted red chilies; purée to thin consistency. Salt and pepper to taste; pour into tupperware and refrigerate.


Street Tacos Dinner Instructions:

Cook marinated carne asada in a large skillet over medium heat for about 5-10 minutes, stirring and turning meat often. Cook all 2 pounds in several batches, not to overcrowd the pan while cooking. 

Heat tortillas on a skillet over medium heat for about 2 minutes, each side. Add a thin slice of Ranchero cheese to the tortilla while it’s warming to melt, if cheese is desired. 

My double-burner skillet cooks two tortillas at a time, so get in line for hot and ready tortillas! Add cooked carne asada beef to your tacos and garnish with chopped onions, chopped cilantro, spoon on green or red salsa, squeeze fresh lime juice to finish and enjoy!
