Gooey Chex Mix

INGREDIENTS
- 12 oz. Rice Chex cereal
- 12 oz. Golden Grahams cereal
- 1 7oz bag shredded coconut
- 1 4oz bag slivered or sliced almonds
- 1 1/2 cups butter
- 2 cups granulated sugar
- 2 cups light corn syrup
- 1/4 tsp. salt
INSTRUCTIONS
- In a large mixing bowl mix together Chex cereal, Golden Grahams, coconut, and almonds.
- In a medium saucepan add butter, sugar, corn syrup, and salt. Bring to a boil and continue stirring for 2 minutes, 220 degrees is perfect on a candy thermometer to keep it gooey.
- Pour hot butter mixture over Chex mix and stir to coat all ingredients well.
- Pour mixture out onto 2 large cookie sheets and let cool. Stir it around occasionally to avoid clumping.
- Once it is cooled store it in an airtight container. Enjoy!
Gooey Chex Mix Variations
I love this Chex mix just the way it is, but here are a few additions that I think would be great mix ins.- If you’re not a fan of almonds try using cashews, peanuts, walnuts, or even a mix nut variation. If you are allergic to nuts, omit them all together and try some of the other options listed below.
- Add in some pretzel pieces and give it a little more of a sweet and salty flavor.
- Try adding in some dried fruit such as craisins, dried cherries, or even dried mango.
- Add in some milk chocolate chip, white chocolate chips, or M&M’s.
