Cherry Cheesecake Delight

Plan ahead and make this one the night before. It is easier to cut after 8 hours of chill time in the fridge.
Ingredients:
Crust:
2 pkgs honey graham crackers
1/4 cup sugar
1/2 cup butter, melted
Cheesecake:
1 cup (or half pint) heavy whipping cream
1 block (8 oz) cream cheese, softened
1 cup powdered sugar
Cherry Topping:
1 can (21 oz) cherry pie filling
Instructions:
- Heat oven to 350 degrees and spray a 9x13 baking dish lightly with cooking spray.
- To make the crust: Put both packages of graham crackers into a gallon size Ziplock bag; seal it, and use a rolling pin to crush into crumbs. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl and combine together. Pour into the prepared baking dish and press evenly into the pan. Bake for 8 minutes. Let cool completely.
- To make the filling: Pour heavy whipping cream into a blender; beat cream until stiff peaks form and it’s thick. Add the cream cheese and powdered sugar. Mix well. Pour it onto your graham cracker crust and gently spread out evenly over the crust.
- Top the cheesecake layer with the can of cherry pie filling. Spread out evenly.
- Cover with a lid or saran wrap and refrigerate for at least 6-8 hours or for best results refrigerate overnight.
Recipe Variations:
For a Chocolate Raspberry Cheesecake Delight, substitute with Chocolate Graham Crackers and Raspberry Pie Filling.
For a Cinnamon Apple Cheesecake Delight, substitute with Cinnamon Graham Crackers and Apple Pie Filling.
