Carrot French Fries
Adapted From: Everyday Paleo Family Cookbook
Everyone has heard of sweet potato fries as a healthy alternative, why not use carrots?! The coconut oil adds such a great taste to the carrots that you'll eat them up fast.
Ingredients:
1/4 cup coconut oil
4 carrots, peeled and cut into matchstick pieces
sea salt
Preparation:
Add the coconut oil to a large skillet, heat over medium-high heat. When the oil is hot, add the carrots and fry for 6-8 minutes; turning them often. The carrots are done when they start to crisp and turn brown. Transfer carrots to a paper towel sheet to drain. Sprinkle with sea salt.

I french fry carrots ALL the time since I was knee high to a grasshopper!
