Mitzi’s Mess Sandwiches
My mother-in-law learned this recipe while working at a restaurant years ago, it’s one of our favorites for dinner or lunch.
Ingredients:
1 pound ground beef
1 yellow onion, julienned
1 green pepper, julienned
1 tblsp olive oil
4 eggs
Colby Jack cheese, shredded
Hoagie buns
Soft butter to spread
Thousand Island dressing
Instructions:
Brown beef in a medium size skillet, draining the fat. Meanwhile, in a separate pan, fry the onion and green pepper in olive oil. In a mixing bowl, whisk eggs and pour over cooked beef evenly. Smash meat into the raw eggs. Don’t stir the meat while the eggs cook into it for a few minutes. Use a large spatula to flip big sections of meat over to cook the other side, trying not to let it crumble apart. Re-smash meat down into pan to re-settle. The eggs help hold the meat together. Sprinkle with cheese and cover with a lid to let the cheese melt, and the eggs will finish cooking for a couple more minutes. The melted cheese also helps hold the meat together.
Butter each hoagie bun and toast the butter side on a clean skillet or griddle. Scoop meat portions to fit the bun without letting it crumble apart. Top sandwiches with sautéed onions and peppers and dressing.
Serving: About 5 or 6 sandwiches
