3 Ingredient Cake Cookies

So easy, so yummy, and so addicting. 

Ingredients:

1 15 ounce box Betty Crocker Rainbow Chip cake mix (or any cake mix)

2 eggs

1/2 cup butter, melted

Instructions: 

Preheat oven to 350°. Mix all ingredients together with an electric mixer. Scoop balls of about 2 tablespoons each on a baking sheet 2 inches apart. Bake for 10-12 minutes or until cookies are set. Let cool 2 minutes then transfer cookies to a wire rack to cool completely. Store in air tight container. 

Tip: Can use any variation of cake mix with this recipe. For example, Red Velvet cake mix would be good with 1 cup white chocolate chips stirred into the cookie dough and baked as directed. Or Funfetti cake mix with 1/4 cup birthday sprinkles mixed in. My personal favorite is Rainbow Chip cake mix without any mix-ins!!!
