Fiesta Soup

I love Mexican food, so I really appreciate the aroma of the Mexican-style spices and flavor in this delicious soup.


2 tblsp coconut oil
1/2 medium yellow onion, diced
1 red bell pepper, diced
1 Anaheim pepper, diced
2 garlic cloves, minced
1 tblsp ground cumin
1/2 tsp chipotle powder
1 tsp poultry seasoning
2 cups tomatoes, diced
4 cups chicken broth
2 tblsp tomato paste
3 cups chicken, cooked and diced
sea salt
black pepper


cilantro leaves
diced avocado
lime wedges
hot sauce


In a large pot, add the coconut oil, onions, and peppers; sauté over medium heat for 5-7 minutes. Season the veggies by adding the garlic, cumin, chipotle, and poultry seasoning; stir well. Then stir in the tomatoes, chicken broth, tomato paste, and diced chicken; simmer for 10 minutes. Salt and pepper to taste. Top with cilantro leaves, diced avocado, lime wedges, and a few dashes of hot sauce.
