Chicken Waldorf Salad
The dressing on this salad is popping with flavor! Its tangy and naturally sweetened... definitely the best Waldorf recipe I've ever had. Plus it's healthy and paleo-friendly {BONUS!}.
Ingredients:
1/4 cup honey
3 tblsp olive oil
2 tblsp apple cider vinegar
1/4 tsp ground cinnamon
1 tsp minced garlic
3 cups baby spinach leaves
8 ounces cubed chicken, cooked
2 Granny Smith apples, thinly sliced
1 cup red grapes, halved
1/2 cup celery, diced
1/2 cup chopped walnuts
Preparation:
In a medium bowl, whisk together the honey, olive oil, vinegar, cinnamon, and garlic to make the dressing. In a large salad bowl, combine the spinach, chicken, apples, grapes, celery, and walnuts. Drizzle with dressing and toss to coat evenly.
