Homemade Almond Butter

Making your own almond butter is more affordable and extra creamy. You can make other nut butters this same way {cashew butter, hazelnut butter, macadamia butter, pecan butter, pistachio butter, and walnut butter - other nuts may need a tablespoon or two of coconut oil added}.
Ingredients:
6 cups raw almonds
Preparation:
Spread the almonds in a single layer on a baking sheet. Dry-roast the almonds in the oven at 350° for 10-12 minutes. Freshly roasted almonds will break down into nut butter faster when warm. Place about 1 cup warm almonds in a food processor at a time with sea salt and/or spices, if preferred. {I have a small 2-cup size food processor, so I process 1 cup at a time. If yours is bigger, fill it half full.} Process until the almonds are a smooth and creamy butter - be patient. Transfer the fresh almond butter into mason jars and store in the fridge.

Peanut butter and chocolate is my favorite treat combination. Peanut butter is not a Paleo food {Gasp!}, but almond butter is the perfect substitute. When a peanut butter craving strikes, I eat a spoonful of almond butter sprinkled with mini dark chocolate chips. The Enjoy Life brand can be found at a health food store. They are gluten-free and dairy-free - which makes them Paleo approved. It's my little guilty pleasure! :)
