Healthy BBQ Sauce

Healthy BBQ Sauce
Adapted From: Everyday Paleo Family Cookbook

I don't like BBQ sauce - at all! But this recipe is the exception. I have to double or triple my batches cause it goes so fast! I want to hug the man who created it; it is that good.

6 garlic cloves, minced
1/2 yellow onion, diced
3 tblsp coconut oil, divided
2 tsp lemon zest
1 small sprig rosemary
1 cup pineapple juice, divided
1 cup apple juice, divided
1/2 cup organic tomato paste
1/4 cup red cooking wine
1/4 cup water
1 tblsp coconut aminos or bragg liquid aminos
1 tblsp chili powder
1 tbslp apple cider vinegar
1/2 tblsp paprika
1/2 tblsp ground cumin
1 tsp sea salt
1 tsp dijon mustard
1/8 tsp cayenne pepper
1/8 tsp red chili flakes

In a medium skillet, sauté the garlic and onions in 2 tblsp oil over medium heat until the onions are tender. Add the lemon zest, rosemary sprig, 1/8 cup pineapple juice, and 1/8 cup apple juice; let simmer on low for awhile. Meanwhile, in a separate large skillet, heat 1 tblsp oil over medium heat; whisk in the tomato paste. Slowly stir in the cooking wine, the remaining pineapple and apple juice; 1/4 cup at a time. Pour the simmered onion mixture into a strainer and let the onion liquid drip into the tomato mixture. Continue to simmer over medium heat for 8 minutes; stirring constantly with a whisk. Add the remaining ingredients, and simmer for 8 minutes longer.

Makes about 2 cups
