2-Minute Scrambled Eggs in a Mug

Making scrambled eggs doesn't get any more simple than this! I don't need to dirty a pan, and it only takes 2 minutes. It's the perfect breakfast on the go.


2 eggs
2 tblsp milk


Crack both eggs into a 12-ounce microwave-safe mug; add milk. Beat with a fork until blended. Microwave on HIGH 45 seconds, then stir. Microwave for 30 to 45 seconds longer, or until eggs are almost set; stir again. Spoon scrambled eggs onto a tortilla and garnish with favorite toppings.

Topping Ideas: shredded cheese, salsa, sliced avocado, diced bell peppers, crumbled bacon, diced tomatoes, diced onion, black beans {heat black beans in the mug with the eggs}...
